Hungarian Goulash

The sour cream gives this sauce a wonderful color. And the paprika seems to give it a gorgeous warm glow. Just delicious!
1 1/2 lbs stewing beef, cubed
1 Tbsp olive oil
2 large onions, sliced
2 cloves garlic, crushed
2 Tbsp flour
1 Tbsp (heaping) Hungarian paprika 
14 oz can tomatoes, crushed
1 green pepper 

Preheat the oven to 275 degrees. 
Heat the olive oil in a large Dutch oven, and brown the cubes of beef in batches and then set aside. 
Turn the heat to medium, and cook the onions for about five minutes. Then add the garlic and the beef cubes. Add the flour and the paprika and stir well. 
Pour in the tomatoes and season with salt and pepper. 
Bring to a gentle simmer. Cover with a lid and cook in the oven for about 2 hours. 
After 2 hours, add the green pepper, cover and cook for another 30 minutes 
Just before plating stir in the sour cream. 
Serve with rice or egg noodles.

Cheesy Potato Wedges

6 large potatoes, cut into wedges
8 Tbsp olive oil
1 C Parmesan cheese
2 tsp seasoning salt (to taste)
4 tsp Italian seasoning
4 tsp garlic powder 
4 tsp paprika

Optional:
1 C Mexican cheese, shredded
1/3 C bacon bits

Preheat oven to 400 degrees. 
Put the potato wedges into a large bowl. Add the olive oil and gently toss to coat, then add the Parmesan cheese and toss again. 
In a small bowl stir together the seasoning salt, Italian seasoning, garlic powder, and paprika. Sprinkle this mixture over the potatoes and gently stir. 
Place the wedges evenly in a large baking dish, or on a cookie sheet lined with foil. 
Bake for about 45-50 minutes until done. 
Check the seasoning and adjust accordingly. 
Optional: add the cheese and bacon bits when you take the potatoes out of the oven. 
Serve with your choice of sour cream, mayonnaise or ketchup.
